Chilled Cucumber/Avocado Mint Soup

Serves: 4 or 6 (depending on your appetite!)

Ingredients:
4 medium cucumber, half peeled, seeded and diced
1/2 ripe Haas avocado, peeled and diced
1/2 Granny Smith apple, peeled and diced
1 cup of Greek yogurt
½ cup of sour cream
juice of half lemon
6 sprigs fresh mint
salt and pepper to taste

Put all ingredients in a blender and blend on “High” for 30 seconds.
Voila! Your chilled soup is ready to drink… Tasty, easy to make and healthy!!
